  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup fresh pineapple, finely chopped
  • 1 cup shredded unsweetened coconut
  • 3 large eggs, at room temperature
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, combine graham cracker crumbs and melted butter; press firmly into the bottom of the pan.
  3. Beat cream cheese until smooth; gradually mix in sugar.
  4. Add eggs one at a time, mixing well after each addition. Stir in pineapple, coconut, and vanilla.
  5. Spread filling over crust and bake for 30-35 minutes until edges are set but center is slightly jiggly.
  6. Cool completely at room temperature before refrigerating for at least 4 hours.
