- 8 oz rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers (red/yellow), diced
- 1/2 cup red onion, thinly sliced
- 5 oz salami or pepperoni, sliced
- 1/2 cup black olives, pitted and sliced
- 1 cup Italian dressing
- 1/2 cup Parmesan cheese, freshly grated
Instructions
- Boil a large pot of salted water. Add rotini pasta and cook until al dente according to package instructions.
- While the pasta cooks, chop cherry tomatoes, bell peppers, red onion, salami or pepperoni, and olives into bite-sized pieces.
- Drain the cooked pasta under cold water to cool it quickly.
- In a large mixing bowl, combine cooled pasta with chopped veggies and meats.
- Pour Italian dressing over the mixture and toss gently to combine.
- Sprinkle freshly grated Parmesan cheese on top and give it another gentle toss.
- Chill in the fridge for at least 30 minutes before serving for optimal flavor blending.
