- 2 tbsp lemon juice (freshly squeezed)
- 3 tbsp extra virgin olive oil
- 1 tsp cumin powder
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas under cold water. Pat dry with a towel.
- In a pan over medium heat, add olive oil and cumin powder. Sauté for about 1 minute until fragrant.
- Add the chickpeas, red onion, and bell pepper to the pan. Cook for 5-7 minutes until golden brown and crispy.
- Segment the tangerines into bite-sized pieces, reserving any juice.
- In a bowl, whisk together olive oil, lemon juice, salt, pepper, and reserved tangerine juice until well combined.
- In a large bowl, mix the sautéed chickpeas with tangerines, cilantro, and dressing. Toss gently until evenly coated.
