  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  3. Pour in vegetable broth and bring to a boil. Stir in the rinsed rice, salt, and pepper.
  4. Lower the heat to simmer, cover, and cook for 18-20 minutes until all liquid is absorbed.
  5. Remove from heat and let sit covered for an additional 5 minutes. Fluff with a fork, then stir in chopped cilantro and lime juice.
