  • 1 lb ground beef (80/20)
  • 1 cup fresh breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1 cup diced bell peppers (red or yellow)
  • 1 cup sautéed onions
  • 1/4 cup ketchup (for glaze)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté diced onions and bell peppers in a skillet over medium heat until soft (about 5 minutes). Let cool.
  3. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, sautéed veggies, minced garlic, eggs, salt, pepper, and herbs.
  4. Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
  5. Brush ketchup over the top and sprinkle additional Parmesan if desired.
  6. Bake for 60-75 minutes until the internal temperature reaches 160°F (70°C). Let rest before slicing.
