  • 1 ¾ cups water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup fresh mint leaves, chopped
  • Juice of 2 limes (about ¼ cup)
  • 3 tablespoons extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until it runs clear. Combine rinsed quinoa with water in a saucepan; bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Let stand covered for an additional 5 minutes.
  3. While the quinoa cooks, chop cucumber, cherry tomatoes, and red onion.
  4. In a large bowl, mix cooked quinoa with chopped veggies and mint.
  5. Drizzle lime juice and olive oil over the salad; season with salt and pepper. Toss gently to combine.
  6. Serve immediately or chill in the refrigerator before serving.
