Instructions
- Rinse quinoa under cold water until it runs clear. Combine rinsed quinoa with water in a saucepan; bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Let stand covered for an additional 5 minutes.
- While the quinoa cooks, chop cucumber, cherry tomatoes, and red onion.
- In a large bowl, mix cooked quinoa with chopped veggies and mint.
- Drizzle lime juice and olive oil over the salad; season with salt and pepper. Toss gently to combine.
- Serve immediately or chill in the refrigerator before serving.
