  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (cold)
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 cup raspberries (fresh or frozen)
  • 1 tsp baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix flour, granulated sugar, and cold butter until crumbly. Press this mixture into the bottom of the prepared dish.
  3. Bake the crust for about 15 minutes until golden brown.
  4. While cooling, whisk together eggs, sugar, lemon juice, zest, and baking powder until smooth. Gently fold in raspberries.
  5. Pour the filling over the baked crust and bake for another 20-25 minutes until set but slightly jiggly in the center.
  6. Once cooled, dust with powdered sugar before cutting into squares.
