  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup (low-fat optional)
  • 1 medium onion, diced
  • 2 cups low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, heat oil over medium heat; sauté the diced onion until translucent (about 5 minutes).
  4. In a bowl, combine uncooked rice, cream of mushroom soup, and chicken broth. Pour into the prepared baking dish.
  5. Layer the seasoned chicken on top of the rice mixture and scatter frozen mixed vegetables around.
  6. Top generously with shredded cheddar cheese.
  7. Cover with aluminum foil (shiny side down) and bake for 45 minutes. Remove foil for the last 10 minutes to let the cheese bubble.
