- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of mushroom soup (low-fat optional)
- 1 medium onion, diced
- 2 cups low-sodium chicken broth
- 2 cups frozen mixed vegetables
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
- Season the chicken breasts with salt and pepper.
- In a skillet, heat oil over medium heat; sauté the diced onion until translucent (about 5 minutes).
- In a bowl, combine uncooked rice, cream of mushroom soup, and chicken broth. Pour into the prepared baking dish.
- Layer the seasoned chicken on top of the rice mixture and scatter frozen mixed vegetables around.
- Top generously with shredded cheddar cheese.
