  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 1 medium sweet onion, finely chopped
  • 1 inch fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • ½ tsp chili powder (adjust to taste)
  • Salt and pepper to taste
  • 2 tbsp vegetable oil or ghee
  • Juice of ½ lemon (optional)

Instructions

  1. Wash and chop the spinach; set aside. Peel and dice the Yukon Gold potatoes into bite-sized chunks.
  2. Heat oil in a large pan over medium heat. Add onions and sauté until translucent.
  3. Stir in minced garlic and grated ginger; cook for about 1 minute until fragrant.
  4. Add cumin seeds, turmeric, coriander powder, chili powder, salt, and pepper; stir for another minute until aromatic.
  5. Fold in diced potatoes with the spices and add enough water to cover them partially. Cover and simmer for about 15-20 minutes until tender.
  6. Once potatoes are soft, gradually stir in chopped spinach until wilted—cook for an additional 5 minutes.
  7. Serve hot with naan or rice; squeeze lemon juice on top if desired.
