  • 2 medium fresh tangerines (juice and zest)
  • 1 cup pitted green olives
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 cinnamon stick
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic. Zest two tangerines.

  4. Stir in the garlic, tangerine juice, sliced tangerines, olives, broth, spices, and cinnamon stick until well combined.
  5. Bring to a gentle simmer, cover, reduce heat to low, and cook for 30-35 minutes until chicken is tender.
