  • 12 oz button mushrooms, cleaned and stems removed
  • 8 oz cream cheese, softened
  • 1 cup shredded low-moisture mozzarella cheese
  • 2 cloves fresh garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chives or green onions, chopped
  • 1 tbsp olive oil
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. In a bowl, combine cream cheese, mozzarella, garlic, and chopped mushroom stems until smooth.
  3. Stir in Parmesan cheese and chives until well mixed.
  4. Stuff each mushroom cap generously with the mixture and place them in the baking dish.
  5. In another bowl, mix panko breadcrumbs with olive oil; sprinkle over stuffed mushrooms.
  6. Bake for 20-25 minutes or until golden brown and bubbly.
