- 8 oz ribeye steak
- 2 cups fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh basil or parsley, chopped
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- 1. Season steak with salt and pepper. Heat a grill pan over medium-high heat and sear for 4-5 minutes per side for medium-rare. Let it rest before slicing.
- 2. Boil salted water in a pot. Add fusilli and cook until al dente according to package instructions. Drain and rinse under cold water.
- 3. While pasta cools, dice cherry tomatoes, cucumber, and red onion.
- 4. In a small bowl, whisk together olive oil and balsamic vinegar; season with salt and pepper.
- 5. In a large bowl, combine cooled pasta, chopped vegetables, sliced steak (thinly cut against the grain), and fresh herbs. Drizzle with dressing and toss gently.
