  • 8 oz ribeye steak
  • 2 cups fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil or parsley, chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. 1. Season steak with salt and pepper. Heat a grill pan over medium-high heat and sear for 4-5 minutes per side for medium-rare. Let it rest before slicing.
  2. 2. Boil salted water in a pot. Add fusilli and cook until al dente according to package instructions. Drain and rinse under cold water.
  3. 3. While pasta cools, dice cherry tomatoes, cucumber, and red onion.
  4. 4. In a small bowl, whisk together olive oil and balsamic vinegar; season with salt and pepper.
  5. 5. In a large bowl, combine cooled pasta, chopped vegetables, sliced steak (thinly cut against the grain), and fresh herbs. Drizzle with dressing and toss gently.
