  • 4 cloves fresh garlic, minced
  • 2 tsp Cajun seasoning (adjust to taste)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • 1 cup bell peppers (red and green), sliced
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the seasoned chicken breasts for about 5 minutes on each side until golden.
  2. Add minced garlic and sliced bell peppers to the skillet; sauté for an additional 3 minutes.
  3. Transfer the browned chicken and vegetables to a slow cooker. Pour in the chicken broth.
  4. In a bowl, whisk together heavy cream, Parmesan cheese, and Cajun seasoning until smooth. Pour over the chicken mixture.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. About 20 minutes before serving, cook pasta according to package instructions until al dente; drain.
  7. Shred the chicken in the slow cooker, mix everything gently, and fold in cooked pasta before serving.
