- 4–5 medium Russet potatoes (about 2 lbs), thinly sliced
- 2 cups heavy cream
- 1 ½ cups sharp cheddar cheese, grated
- 1 cup Gruyère cheese, grated
- ½ cup Parmesan cheese, grated
- 3 cloves fresh garlic, minced
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Thinly slice the Russet potatoes using a mandoline or sharp knife.
- In a saucepan over medium heat, combine heavy cream, garlic, thyme, salt, and pepper. Warm until fragrant but not boiling.
- In a greased baking dish, layer half the sliced potatoes. Pour half the cheese sauce over them and sprinkle with half of each cheese.
- Repeat layering with remaining potatoes and sauce; top with extra cheese.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
