  • 45 medium Russet potatoes (about 2 lbs), thinly sliced
  • 2 cups heavy cream
  • 1 ½ cups sharp cheddar cheese, grated
  • 1 cup Gruyère cheese, grated
  • ½ cup Parmesan cheese, grated
  • 3 cloves fresh garlic, minced
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thinly slice the Russet potatoes using a mandoline or sharp knife.
  3. In a saucepan over medium heat, combine heavy cream, garlic, thyme, salt, and pepper. Warm until fragrant but not boiling.
  4. In a greased baking dish, layer half the sliced potatoes. Pour half the cheese sauce over them and sprinkle with half of each cheese.
  5. Repeat layering with remaining potatoes and sauce; top with extra cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
