  • 2 lbs baby back pork ribs
  • 1 cup 100% pomegranate juice
  • 1/2 cup brown sugar (dark preferred)
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 300°F (150°C). Remove the membrane from the back of the ribs for better flavor absorption.
  2. In a saucepan over medium heat, combine pomegranate juice, brown sugar, garlic, ginger, soy sauce, and apple cider vinegar. Stir until sugar dissolves and mixture thickens slightly.
  3. Season both sides of the ribs generously with salt and pepper. Place on a baking sheet lined with aluminum foil.
  4. Brush half of the glaze over the ribs and reserve the rest for later.
  5. Cover with foil and bake for two hours to ensure tenderness.
  6. After two hours, uncover and baste with remaining glaze. Increase oven temperature to 400°F (200°C) and bake uncovered for an additional 20 minutes until caramelized.
