- 2 lbs baby back pork ribs
- 1 cup 100% pomegranate juice
- 1/2 cup brown sugar (dark preferred)
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp low-sodium soy sauce
- 2 tbsp apple cider vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 300°F (150°C). Remove the membrane from the back of the ribs for better flavor absorption.
- In a saucepan over medium heat, combine pomegranate juice, brown sugar, garlic, ginger, soy sauce, and apple cider vinegar. Stir until sugar dissolves and mixture thickens slightly.
- Season both sides of the ribs generously with salt and pepper. Place on a baking sheet lined with aluminum foil.
- Brush half of the glaze over the ribs and reserve the rest for later.
- Cover with foil and bake for two hours to ensure tenderness.
- After two hours, uncover and baste with remaining glaze. Increase oven temperature to 400°F (200°C) and bake uncovered for an additional 20 minutes until caramelized.
