  • 4 boneless, skinless chicken breasts
  • 1 tsp saffron threads
  • 1 cup plain yogurt
  • 4 cloves fresh garlic, minced
  • Juice of 1 lemon (about 2 tbsp)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • Fresh cilantro for garnish

Instructions

  1. In a large bowl, combine yogurt, minced garlic, lemon juice, saffron (soaked in warm water), salt, and pepper. Add chicken breasts and coat well; refrigerate for at least one hour.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Remove marinated chicken from the fridge and place it in the hot pan. Cook for 5-7 minutes on each side until golden brown.
  4. Pour in chicken broth and let simmer for another 5-10 minutes until slightly thickened.
  5. Transfer chicken to a platter, drizzle with sauce from the pan, and garnish with fresh cilantro. Serve with rice or flatbreads.
