  • 4 cloves fresh garlic, minced
  • 1 cup oil-packed sun-dried tomatoes, sliced
  • 1 cup heavy cream
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (fettuccine or penne)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic and slicing sun-dried tomatoes.
  2. Boil salted water in a large pot and cook pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet over medium-high heat, add olive oil. Once hot, season chicken breasts with salt and pepper and cook until golden brown, about 5-7 minutes per side.
  4. Add minced garlic and sun-dried tomatoes to the skillet when chicken is nearly done; sauté until fragrant (about 1 minute).
  5. Pour in heavy cream while scraping up browned bits from the pan; let simmer until slightly thickened.
  6. Toss cooked pasta into the skillet along with chopped basil and grated Parmesan cheese; mix well until coated.
