  • 1 cup full-fat coconut milk
  • 1/2 cup fresh mango puree
  • 2 tsp gelatin powder (unflavored)
  • 1/4 cup sugar (adjust to taste)
  • 1 tbsp lime juice

Instructions

  1. Lightly grease panna cotta molds with cooking spray and set aside.
  2. In a saucepan over medium heat, whisk together heavy cream, coconut milk, and sugar until heated but not boiling.
  3. In a bowl, sprinkle gelatin over 2 tbsp cold water; let it bloom for about five minutes. Add this to the warm cream mixture and whisk until fully dissolved.
  4. Stir in mango puree and lime juice until well combined.
  5. Carefully pour the mixture into prepared molds and refrigerate for at least four hours or overnight until set.
  6. To serve, dip molds briefly in hot water before flipping onto serving plates. Garnish with extra mango slices or toasted coconut flakes.
