  • ¼ cup powdered sugar
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 cup granulated sugar
  • ¼ cup freshly squeezed lemon juice
  • Zest from 1 lemon
  • 1 cup fresh raspberries
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a bowl, mix flour, powdered sugar, and melted butter until crumbly. Press into the bottom of the prepared pan and bake for 15 minutes until lightly golden.
  3. In another bowl, whisk eggs, granulated sugar, lemon juice, and lemon zest until smooth. Gently fold in raspberries.
  4. Pour filling over the crust and bake for an additional 20-25 minutes until set but slightly jiggly in the center.
  5. Allow to cool completely before slicing into squares. Dust with powdered sugar just before serving.
