- 1/2 cup panko breadcrumbs
- Zest of 1 lemon
- 1 cup orzo pasta
- 2 tbsp olive oil
- 3 cups low-sodium chicken broth
- Salt and pepper to taste
Instructions
- In a large bowl, mix ground chicken, onion, garlic, parsley, panko breadcrumbs, lemon zest, salt, and pepper until combined.
- Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium heat. Sear meatballs until golden brown on all sides (about 5-7 minutes).
- Meanwhile, bring chicken broth to a boil in another pot. Add orzo and cook until al dente (8-10 minutes). Drain if necessary.
- Return meatballs to the skillet along with any juices from the baking sheet. Add cooked orzo and mix gently.
- Squeeze fresh lemon juice over the top before serving and garnish with additional parsley.
