  • 1/4 cup fresh parsley, finely chopped
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1/2 cup panko breadcrumbs
  • Zest of 1 lemon
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 3 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground chicken, onion, garlic, parsley, panko breadcrumbs, lemon zest, salt, and pepper until combined.
  2. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs until golden brown on all sides (about 5-7 minutes).
  4. Meanwhile, bring chicken broth to a boil in another pot. Add orzo and cook until al dente (8-10 minutes). Drain if necessary.
  5. Return meatballs to the skillet along with any juices from the baking sheet. Add cooked orzo and mix gently.
  6. Squeeze fresh lemon juice over the top before serving and garnish with additional parsley.
