Description

  • 2 lbs Yukon Gold potatoes
  • 6 slices thick-cut bacon
  • 1 medium red onion, diced
  • 1/3 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and peel the Yukon Gold potatoes, cutting them into equal-sized chunks.
  2. Boil the potatoes in salted water until fork-tender (about 15-20 minutes). Drain and let cool slightly.
  3. While potatoes cook, fry bacon in a skillet over medium heat until crispy. Drain on paper towels and reserve bacon grease.
  4. In a large bowl, whisk together apple cider vinegar, Dijon mustard, salt, pepper, and fresh dill. Stir in crumbled bacon and some reserved bacon grease.
  5. Gently fold the warm potatoes into the dressing mixture without mashing them.
  6. Serve immediately or refrigerate for at least an hour to enjoy chilled.
