Instructions

- In another bowl, cream together softened butter and granulated sugar until fluffy. Mix in pumpkin puree and eggs.
- Gradually add dry ingredients to the wet mixture until just combined.
- Spoon mounds of batter onto prepared sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes until golden brown; let cool completely.
- For the filling, beat together cream cheese and powdered sugar until smooth. Spread on half of the cooled cookies and sandwich with the other halves.
