  • ½ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 8 oz cream cheese (full-fat)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together softened butter and granulated sugar until fluffy. Mix in pumpkin puree and eggs.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Spoon mounds of batter onto prepared sheets, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes until golden brown; let cool completely.
  7. For the filling, beat together cream cheese and powdered sugar until smooth. Spread on half of the cooled cookies and sandwich with the other halves.
