  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh corn (about 2 ears)
  • 1 medium red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 2 tbsp olive oil
  • 1/2 cup sour cream or Greek yogurt

Instructions

  2. Heat a skillet over medium-high heat; cook the marinated chicken for 6-7 minutes per side until golden brown and cooked through.
  3. Remove chicken; in the same skillet, sauté onions and corn for about 5-6 minutes until onions are translucent and corn caramelizes.
  4. Dice the cooked chicken and return to the skillet with corn and onions. Add lime juice and mix thoroughly.
  5. Serve in bowls topped with cilantro and a dollop of sour cream or yogurt.
