  • Zest of 1 orange
  • Juice of 1 lemon

Instructions

  1. Rinse the cranberries and discard any mushy ones. If using fresh pineapple, cut it into bite-sized chunks.
  2. In a medium saucepan over medium heat, combine cranberries, pineapple, sugar, orange zest, lemon juice, and the cinnamon stick. Stir gently.
  3. Allow the mixture to reach a gentle boil while stirring occasionally. Once bubbling, reduce heat to low and simmer for 10-15 minutes until the cranberries burst.
  4. Remove from heat and let cool slightly. Discard the cinnamon stick before transferring the relish to a serving bowl.
  5. For enhanced flavor, refrigerate for at least one hour before serving. Garnish with chopped mint leaves just before serving.
