Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz fettuccine or penne pasta
  • 8 oz fresh mozzarella cheese, cubed
  • 1 cup heavy cream
  • 4 garlic cloves, minced
  • Fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Gather and prepare all ingredients: trim chicken and chop garlic and basil.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (about 6–7 minutes per side). Remove from skillet.
  3. Sauté minced garlic in the same skillet until fragrant. Add heavy cream and stir for about 2 minutes.
  4. Stir in cubed mozzarella until melted and smooth.
  5. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  6. Slice cooked chicken and return it to the skillet with drained pasta. Mix well, adding reserved pasta water for desired creaminess.
  7. Serve topped with fresh basil and grated Parmesan.
