  • 2 large sweet potatoes (approximately 1 lb), diced
  • 1 ripe avocado
  • 1/2 cup fresh cilantro
  • Juice of 2 limes
  • 3 garlic cloves
  • 2 tbsp extra virgin olive oil (plus more for roasting)
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced sweet potatoes with olive oil, salt, pepper, cumin, and paprika. Spread on a baking sheet and roast for 25-30 minutes until golden.
  3. Season chicken breasts with salt and pepper. In a skillet over medium-high heat, add olive oil and cook chicken for about 6-7 minutes per side until golden brown (165°F internal temperature).
  4. In a blender, combine avocado, garlic, cilantro, lime juice, olive oil, salt, and pepper; blend until smooth.
  5. Serve bowls with roasted sweet potatoes and sliced chicken drizzled with avocado mojo.
