  • 1/2 cup Guinness stout (dark beer)
  • 1/2 cup unsalted butter (melted)

  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • For Frosting: 8 oz cream cheese (full-fat)
  • For Frosting: 2 cups powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, and salt until well combined.
  3. In another bowl, mix melted butter, Guinness stout, eggs, sour cream, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients while stirring gently until just combined.
  5. Spoon the batter into prepared liners about two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with a mixture of cream cheese and powdered sugar.
