  • 1 cup dill pickles, sliced (about 5 whole pickles)
  • 1 cup freshly grated Parmesan cheese
  • 2 cups panko breadcrumbs
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tsp dried dill weed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the dill pickles into thin rounds (about 1/4 inch thick).
  3. In a bowl, mix panko breadcrumbs, Parmesan cheese, garlic powder, salt, pepper, and dill weed until combined.
  4. In another bowl, beat the eggs until frothy.
  5. Dip each chicken breast into the egg wash, then coat with the breadcrumb mixture, pressing firmly to adhere.
  6. Place coated chicken on a parchment-lined baking sheet and top with pickle slices.
  7. Bake for 25-30 minutes or until golden brown and cooked through.
