- Juice of 1 lemon

Instructions
- Preheat oven to 400°F (200°C). Toss beet cubes with olive oil, salt, and pepper on a baking sheet. Roast for 30-40 minutes until tender.
- In a pot over medium heat, sauté diced onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook until golden.
- Pour in vegetable broth and add roasted beets; simmer for 10 minutes.
- Blend the mixture until smooth using an immersion blender or standard blender.
- Stir in spirulina powder until fully incorporated. Adjust seasoning as needed with salt or lemon juice.
