Ingredients

  • 4 medium beets, peeled and cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp spirulina powder
  • 1/2 cup heavy cream or coconut milk
  • 2 tbsp fresh dill or basil, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss beet cubes with olive oil, salt, and pepper on a baking sheet. Roast for 30-40 minutes until tender.
  2. In a pot over medium heat, sauté diced onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook until golden.
  3. Pour in vegetable broth and add roasted beets; simmer for 10 minutes.
  4. Blend the mixture until smooth using an immersion blender or standard blender.
  5. Stir in spirulina powder until fully incorporated. Adjust seasoning as needed with salt or lemon juice.
  6. Serve hot, garnished with fresh herbs or a drizzle of cream/coconut milk.
