  • 3 lbs Beef Chuck Roast
  • 4 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 2 medium Yellow Onions, diced
  • 4 cloves Garlic, minced
  • 1 cup Red Wine
  • 2 cups Low-Sodium Beef Broth
  • 2 tsp Italian Seasoning
  • 2 Bay Leaves
  • Salt and Pepper to taste

Instructions

  1. Prep your ingredients by chopping the carrots, celery, onions, and mincing the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast for about 4-5 minutes on each side until browned.
  3. Remove the beef and add onions and garlic to the skillet; sauté until translucent.
  4. Pour in red wine, scraping up browned bits; cook until reduced by half.
  5. Transfer the seared beef back to a slow cooker with carrots, celery, broth, Italian seasoning, bay leaves, salt, and pepper. Stir gently to combine.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until fork-tender.
