- 2 tsp fresh thyme (or 1 tsp dried thyme)
- 2 bay leaves
- 2 cups low-sodium beef broth
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- Salt and pepper to taste

- 1. Prep your ingredients: Chop carrots, onions, and mushrooms into bite-sized pieces.
- 2. Sear the beef: In a heavy pot over medium-high heat, add olive oil and season beef chunks with salt and pepper. Brown on all sides for about 5 minutes.
