Ingredients

Scale
  • 1 lb large shrimp (peeled and deveined)
  • 2 ripe avocados (sliced)
  • 2 ripe mangoes (diced)
  • 2 tbsp freshly squeezed lime juice
  • 2 cloves garlic (minced)
  • 1/4 cup fresh cilantro (chopped)
  • 1/4 cup red onion (diced)
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil
  • Chili flakes (optional)

Instructions

  1. In a skillet, heat olive oil over medium-high heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Add shrimp to the skillet; cook until pink and opaque, approximately 3-4 minutes. Season with salt and pepper.
  3. While shrimp cooks, prepare the mango salsa: Combine diced mangoes, red onion, chopped cilantro, lime juice, and a pinch of salt in a bowl.
  4. Assemble bowls by layering cooked shrimp on rice or quinoa, adding avocado slices on top.
  5. Generously spoon mango salsa over each bowl. Drizzle with additional lime juice if desired.
