  • 1 cup buffalo sauce
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 1 bell pepper (any color), chopped
  • 1 cup corn kernels (frozen or canned)
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. Prepare your ingredients by chopping the onion and bell pepper, and mincing the garlic.
  2. In a skillet over medium heat, sauté the onions in olive oil until golden brown. Add garlic and bell peppers; cook until fragrant.
  3. Transfer sautéed vegetables into the slow cooker with chicken breasts. Pour buffalo sauce over the top.
  4. Add diced tomatoes, black beans, kidney beans, corn, salt, and pepper to the slow cooker. Stir gently to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Shred the chicken inside the pot using forks and stir to incorporate.
