  • 2 medium Yukon Gold potatoes, diced
  • 2 stalks celery, chopped
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep your vegetables by washing and chopping them into bite-sized pieces.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add onions and garlic; sauté until translucent (about 3–4 minutes).
  3. Add carrots, celery, and potatoes to the pot. Pour in vegetable broth until all vegetables are submerged. Bring to a gentle simmer.
  4. Season with salt, pepper, thyme, and parsley while gently stirring. Simmer for about 20 minutes or until veggies are tender.
  5. Use an immersion blender to blend the soup until smooth (or blend in batches). If you prefer chunks, blend partially.
  6. Stir in heavy cream or coconut cream; heat through without boiling for about 5 minutes before serving.
