Instructions
- Prep your vegetables by washing and chopping them into bite-sized pieces.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add onions and garlic; sauté until translucent (about 3–4 minutes).
- Add carrots, celery, and potatoes to the pot. Pour in vegetable broth until all vegetables are submerged. Bring to a gentle simmer.
- Season with salt, pepper, thyme, and parsley while gently stirring. Simmer for about 20 minutes or until veggies are tender.
- Use an immersion blender to blend the soup until smooth (or blend in batches). If you prefer chunks, blend partially.
- Stir in heavy cream or coconut cream; heat through without boiling for about 5 minutes before serving.
