- 2 cups frozen mixed vegetables
- 3 medium Yukon Gold potatoes, thinly sliced
- 1 cup shredded sharp cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, sauté the onions and bell peppers for 5–7 minutes until soft.
- Add the ground beef and cook until browned. Drain excess fat.
- Mix in diced tomatoes and frozen mixed vegetables; stir until heated through.
- In a greased baking dish, layer half of the potato slices at the bottom, followed by the beef mixture and then top with remaining potatoes.
- Sprinkle cheddar cheese on top, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
