Tender beef chuck slow-cooked in a rich red wine sauce, complemented by earthy mushrooms and sweet carrots, creates an unforgettable experience. Perfect for family gatherings or cozy nights in, this recipe offers gourmet taste with surprisingly simple preparation.

Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, sliced thick
  • 8 oz cremini mushrooms, halved
  • 2 cups dry red wine (Pinot Noir recommended)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp fresh thyme leaves
  • 2 bay leaves
  • 4 oz bacon lardons
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. 1. Prepare your ingredients: Season beef cubes with salt and pepper. Chop vegetables and set aside.
  2. 2. Sear the beef: In a large Dutch oven over medium-high heat, cook bacon until crispy. Remove bacon but keep drippings. Sear beef in batches until browned on all sides.
  3. 3. Sauté vegetables: Add onions and carrots to the pot; sauté until onions are translucent (about 5 minutes).
  4. 4. Add garlic and flour: Stir in minced garlic and flour; cook for one minute.
  5. 5. Incorporate liquids: Pour in red wine and beef broth, scraping up browned bits from the bottom of the pot.
  6. 6. Simmer: Return seared beef to the pot along with thyme, bay leaves, and mushrooms. Cover tightly and simmer on low heat for 2-3 hours until beef is fork-tender.
