  • 2 tablespoons lemon juice
  • 3 tablespoons non-dairy milk (e.g., almond or oat)
  • 1 teaspoon vanilla extract
  • Optional: 1/4 teaspoon cinnamon

Instructions

  1. Prepare the Dough: In a large bowl, mix flour and powdered sugar. Cut in the cold vegan butter until crumbly. Gradually add non-dairy milk until the dough holds together. Wrap in plastic wrap and chill for 30 minutes.
  2. Make the Filling: In another bowl, combine blueberries, lemon juice, and optional cinnamon. Mash gently until lumpy.
  3. Roll Out Dough: On a floured surface, roll out half of the chilled dough to about 1/8 inch thick. Cut into ghost shapes using cookie cutters.
  4. Assemble Pies: Place a spoonful of filling on one cut-out shape, top with another shape, and seal edges with a fork.
