  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup bell peppers, chopped (red or yellow)
  • 1 cup sweet corn (fresh or frozen)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Juice of 1 lime
  • 2 cups vegetable broth or water
  • Fresh cilantro (optional)

Instructions

  1. Rinse quinoa under cold water until the water runs clear.
  2. Sauté diced onions in oil over medium heat until translucent (about 3-4 minutes). Add minced garlic and sauté for another minute.
  3. Stir in chopped bell peppers and corn; cook for 3-5 minutes.
  4. Add rinsed quinoa, broth, cumin, chili powder, and lime juice to the skillet. Bring to a boil.
  5. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until quinoa is fluffy and liquid is absorbed.
