  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup dry red wine (Chianti recommended)
  • 2 cups low-sodium beef broth
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1 tbsp fresh rosemary (or 1 tsp dried)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sear the chuck roast on all sides until browned.
  2. Add chopped onions, minced garlic, diced carrots, and celery; sauté until onions are translucent.
  3. Pour in the red wine and deglaze the pot by scraping up browned bits. Simmer for about 5 minutes.
  4. Stir in beef broth along with thyme and rosemary. Bring to a gentle boil before reducing heat to low.
  5. Cover and simmer for 3-4 hours until the meat is fork-tender.
  6. Remove the roast from the pot, let it rest briefly before slicing, and serve with your favorite sides.
