  • 1 medium fresh fennel bulb (about 200g), thinly sliced
  • 2 medium Honeycrisp apples (about 300g), cored and thinly sliced
  • 1 small red onion (about 50g), finely diced
  • ¼ cup fresh flat-leaf parsley (15g), roughly chopped
  • 3 tbsp extra virgin olive oil (45ml)
  • 2 tbsp freshly squeezed lemon juice (30ml)
  • Salt & pepper to taste

Instructions

  1. Prepare the fennel by trimming and slicing it thinly using a sharp knife or mandoline.
  2. Core and slice the apples while keeping their skin on for added color and nutrients.
  3. Finely dice the red onion and roughly chop the parsley.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  5. In a large mixing bowl, combine fennel, apples, onion, and parsley. Drizzle with dressing and toss gently to coat.
  6. Serve immediately for maximum crunch or chill in the fridge for up to 30 minutes to meld flavors.
