  • 2 medium beets, roasted and shredded
  • 1 large apple (Granny Smith or Honeycrisp), diced
  • 1 cup pecans, toasted and chopped
  • 2 cups red cabbage, shredded
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp cider vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast for 45-60 minutes until tender.
  2. Once cooled, peel the beets and shred them along with the red cabbage using a box grater or food processor.
  3. Dice the apple into bite-sized pieces and chop the toasted pecans.
  4. In a small bowl, whisk together olive oil, cider vinegar, honey or maple syrup, salt, and pepper for the dressing.
  5. Combine all ingredients in a large bowl, pour the dressing over the mixture, and toss gently until well coated. Let sit for at least 15 minutes before serving.
