  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 bell pepper (any color), diced
  • 1 ripe avocado, cubed
  • ¼ cup fresh parsley or cilantro, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas; set aside.
  2. Dice the cucumber, halve the cherry tomatoes, slice the red onion, and chop the bell pepper.
  3. Cube the avocado and toss it with a bit of lemon juice to prevent browning.
  4. In a large bowl, combine chickpeas with all chopped veggies and avocado.
