- 3 cups green or purple cabbage, chopped
- 1 cup bell peppers, sliced
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 green onions, sliced
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
Instructions
- Drain and press the tofu to remove excess moisture. Cut into cubes.
- Toss tofu in cornstarch until lightly coated.
- Heat vegetable oil in a skillet over medium-high heat. Fry tofu until golden brown (8-10 minutes).
- Add garlic, ginger, cabbage, and bell peppers; stir-fry for 3-5 minutes until veggies soften but remain crisp.
- Mix soy sauce with sesame oil; drizzle over the stir-fry and toss to combine for another 2-3 minutes.
- Top with green onions before serving.
