  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt (to taste)
  • ¼ tsp pepper (to taste)
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a large bowl, combine cream of mushroom soup, chicken broth, rice, onion powder, garlic powder, and mixed vegetables (if using). Mix well.
  4. Place seasoned chicken in the baking dish and pour the soup mixture over it.
  5. Cover tightly with aluminum foil and bake for about 1 hour or until chicken is cooked through and rice is tender.
  6. Remove foil, sprinkle cheddar cheese on top, and return to oven uncovered for an additional 10-15 minutes until cheese melts and bubbles.
