- 1 cup crushed unsalted pistachios
- 1 cup graham cracker crumbs (or gluten-free alternative)
- ½ cup unsalted butter (melted)
- 16 oz cream cheese (softened)
- 1 cup sour cream (full-fat recommended)
- ¾ cup granulated sugar
- Zest and juice of 2 fresh lemons
- Zest and juice of 2 fresh limes
- 1 cup cherries (pitted and chopped, fresh or frozen)
- 3 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine crushed pistachios, graham cracker crumbs, and melted butter until well mixed. Press into the bottom of a springform pan.
- Bake crust for 10 minutes until lightly golden. Let cool on a wire rack.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, lemon zest, lime zest, eggs, and vanilla extract; mix until blended.
- Gently fold in chopped cherries.
- Pour filling over cooled crust and smooth with a spatula.
- Bake at 325°F (160°C) for about 55-60 minutes until slightly jiggly in the center. Turn off oven and let cool inside with door ajar before chilling overnight in the refrigerator.
