  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 can (4 oz) green chilies
  • 2 cups chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 8 oz sturdy tortilla chips
  • 1 cup sour cream
  • ¼ cup chopped green onions
  • ¼ cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. In a large pot over medium heat, add olive oil and sauté diced onions until translucent. Season and add chicken breasts; cook until done (approx. 15 minutes).
  2. Stir in green chilies, white beans, and chicken broth; simmer until heated through.
