  • 3 Thai bird's eye chilies (or to taste)
  • 1 cup bell peppers, sliced (variety of colors)
  • 1 cup carrots, sliced
  • 1 cup fresh cilantro leaves, chopped
  • 4 cups low-sodium chicken broth

Instructions

  1. Prep your ingredients: Cut chicken into bite-sized pieces and slice vegetables.
  2. Sauté aromatics: Heat oil in a large pot over medium heat. Add minced garlic and grated ginger; sauté for about 1 minute until fragrant.
  3. Add chicken & lemongrass: Stir in chicken pieces and chopped lemongrass; cook until chicken is white on all sides (about 5 minutes).
  4. Pour in coconut milk & broth: Slowly add coconut milk and chicken broth; bring to a gentle simmer while stirring occasionally.
  5. Toss in veggies & spices: Add sliced bell peppers, carrots, and chilies; simmer for about 10 minutes until veggies are tender-crisp.
