  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar (adjust to taste)
  • 1 cup sour cream
  • 2 ripe peaches, diced
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp fresh lemon juice
  • 1 tsp pure vanilla extract
  • 1 tbsp gelatin powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter in a bowl until combined. Press into the bottom of a springform pan.
  2. Bake for 10 minutes or until golden brown. Let cool.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar until fully incorporated.
  4. Mix in sour cream, lemon juice, and vanilla extract until well blended.
  5. Gently fold in diced peaches and mixed berries.
  6. Pour filling into the cooled crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  7. Turn off oven and let cool inside for an hour before refrigerating for at least four hours or overnight.
