  • 1 lb ground beef or turkey
  • 2 cups fresh spinach, chopped
  • 4 cloves minced garlic
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground meat, chopped spinach, minced garlic, breadcrumbs, eggs, Italian seasoning, salt, and pepper. Mix until well-blended.
  3. Shape the mixture into golf ball-sized meatballs and place them on a lined baking sheet.
  4. Bake for 25 minutes until golden brown and cooked through.
  5. Remove from the oven and top each meatball with shredded mozzarella. Return to the oven for an additional 5 minutes until cheese is melted.
