  • 2 cups fresh spinach
  • 8 oz cream cheese, softened
  • 2 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup pine nuts, toasted
  • 2 tbsp olive oil (plus extra for drizzling)
  • ½ cup breadcrumbs (whole wheat or gluten-free)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the Portobello mushrooms with a damp paper towel and remove stems and gills.
  3. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted (2-3 minutes).
  4. In a bowl, mix cream cheese, sautéed spinach, toasted pine nuts, Parmesan cheese, salt, and pepper until smooth.
  5. Generously fill each mushroom cap with the spinach-cheese mixture. Top with breadcrumbs and drizzle with olive oil.
